Bake Oatmeal Chocolate Chip Cookie Dough Bites1

I’m excited and kinda also freaking out concerning this week. I’m planning for the big move to Chicago; but have I told you that I’m the total worst at packing? I’m critical! Anytime I embark on a trip, I usually pack the morning hours of or late the night time before. It’s ridiculous really. This weekend my mom came over to help me pack, while I spent most of my time cleaning up my closet wanting to figure out if I should get rid of any of my clothes, shoes and purses and handbags. And then it’s like all I want to do is avoid packing by cooking more or shopping myself foolish on the internet. Oops.
The exciting part concerning this week is that I’m going to Kansas City for Chopped Con , a food blogging conference. My friend Maegan and I will stay the weekend and explore every one of the delicious bakeries and restaurants in KC, if you have any suggestions I’d want to hear them!
Anyway I know I’m going to need main energy for all of the walking we’ll do in KC usually I’ll get real HANGRY. I swear easily don’t eat every 3 hours, I obtain severe road trend, can’t believe and essentially am not a functioning human being. Please state I’m not the only one with uncontrollable hunger rage.
A real solution would be to always have snack foods on hand. Fruits, bars within the fridge, granola, nut products. Anything, really!
These small energy bites are a brand-new favorite. They finally acquired dates at Trader Joe’s and I knew I had fashioned some recipe testing to accomplish. What arrived of my test may be the most magical little bite ever. I’ve constantly considered why people love dates so much and now I must say i understand their magic.
Yes they are gluten free, vegan, no sugar added (without the chocolate chips) small morsels that taste like chocolate chip cookie dough. I swear it! The best part? They’re just 4 ingredients therefore an easy task to make. I used to be snacking on them in about a quarter-hour. Another perk is usually that you can totally customize them by adding different taste combos.
Maintain these in the fridge or consider them to operate for easy snacking. You can also make these into bars rather than balls and independently cover them in plastic wrap for later on. I enjoyed the bar edition however the bites are simply too dang cute. Plus, in addition, it kinda feels as though you’re eating a large scoop of cookie dough. Other options to try with one of these can be adding coconut, dried out fruit or different varieties of delicious chocolate chips. It’s your decision!

Ingredients
1/2 cup almond or peanut butter
1 cup gluten free rolled oats
1/3 cup vegan chocolate chips (I love the TAKE IT EASY Mini Chocolate Chips)
Optional: 1/4 teaspoon vanilla extract
Instructions
In the plate of a food processor, add pitted dates and practice until a date paste forms. Next add in almond butter and vanilla if using and process once again until well combined. Transfer mixture to a bowl then collapse in oats and chocolate chips; you may need to use the hands to obtain it well incoporated. Please note the dough will end up being extremely sticky, but that’s okay
Roll the dough into a tiny bit smaller than 2 in . balls and put on parchment paper or plastic wrap. Freeze for quarter-hour or refrigerate for 30 minutes to help set the bites. Makes about 14 bites. Store in refrigerator for up to 2 weeks.
