AFTER I was growing up, there have been several ‘staple’ grocery items my Mom always purchased: sesame bagels with salted butter, crunchy carrots with hummus, leafy greens, and… tortilla potato chips! She always acquired a handbag of chips open and prepared to be devoured. #ChipAddictSince1993
Today, I want to introduce you to a fresh tortilla chip brand in my life: Way Better Snack foods! OH MY GOODNESS, if you haven’t heard of these chips however then you’re set for a delicious shock. Tony and I are excessively obsessed with the blue corn (Tony’s fav) nacho parmesan cheese, sweet chili and spicy sriracha flavors. I’m not laying when I state we look for excuses to enjoy them; I make guacamole and purchase salsa just therefore we can drill down in with one of these wonderful whole grain bad boys.

As you probably already know, jalapeno poppers are usually fried. While they’re a tempting appetizer at a restaurant, the calories can add up quickly. Therefore then I thought, you will want to bake them? You’ll know the exact ingredients that are being used and they’re just like delicious (or even more).
Generally in most restaurants, one jalapeno popper can be almost 100 calories.
My version comes in at around 58 calories per pepper. And there’s not really artificial about them.
These baked poppers produced the best party appetizer or treat and just so happen to be a breeze to make: All you have to do is fill each jalapeno half using a light cream cheese/cheese mixture, drench in an egg layer and a crunchy tortilla chip crust. After that bake, eat and revel in!

Tortilla Chip-Crusted Baked Jalapeño Poppers

40 Way Better Snacks Spicy Sriracha Tortilla Chips
4 oz light cream cheese
1/2 cup shredded Mexican cheese
1 tablespoon almond milk (regular milk also works)
1 egg
Preheat oven to 375 levels F. Line a big baking sheet with parchment paper or foil.
In the bowl of a food processor or blender, add the Way Better Snacks Spicy Sriracha Tortilla Chips and practice until they resemble okay crumbs (like bread crumbs). Transfer to a shallow bowl and reserve.
In another bowl, mix jointly cream cheese, shredded cheese and milk until combined. Reserve.
In another separate bowl, beat jointly egg and egg white. Set aside.
Stuff each jalapeno fifty percent with cream cheese mixture. Usually do not overfill.
Dip each stuffed pepper fifty percent in the egg mix completely, then move the pepper in the chip combination and place pepper over the prepared baking sheet. Do it again with each pepper.
Bake for 15-20 minutes or until parmesan cheese is bubbly. Serve while the poppers are sizzling!
