Smashed Avocado, Roasted Bell Pepper & Pepper Jack Quesadillas1

We made a dutch caramel honeycrisp apple pie. It had been so delightful and the all butter crust was the best. I used a mixture of vodka and water this time! I understand, I understand… I should post the recipe!
Tony refinished this gorgeous cupboard for me. I got the idea (and color!) from Pinterest and we found the cabinet in a resale store for only $35 dollars! We’ll be putting a custom cutting board at the top which I’ll need to unique order but I’m soooo excited to use it. Lord understands I need extra kitchen storage space.
My mom and I visited Molly’s Cupcakes and tried a few. We selected a chocolate with chocolate frosting and Reese’s Parts and also a Peanut butter filled pretzel cupcake with caramel mousse, malted buttercream along with a candied pretzel. That certain was my absolute favorite!

Yesterday morning, we stopped in Ann Sather’s for breakfast time. Apparently they are known for their cinnamon rolls, so needless to say my Mother and I tried one. Seriously might have been one of the best cinnamon rolls I’ve ever endured. They were very soft and the frosting was amazing and not excessively sweet.
Anyway, I actually bet your ready for that cheesy quesadilla right now. Me too! Today I’m posting this simple and quick vegetarian recipe for most of my veggie fans out there!
We accidentally purchased an entire bag of avocados and really wished to utilize them up before they became too ripe so I decided to help to make some quesadillas with whatever else I had formed leftover in my own fridge. So here we have been with simply the least complicated quesadillas on the planet.
The best thing about these quesadillas is that you can choose almost any bell pepper you’d like. I’m a huge lover of orange in order that was my choice, but it’s completely up to you. There are many methods to roast bell peppers and I really like this tutorial which explains the different methods. If you don’t have time to roast your personal, you can purchase canned roasted bell peppers from your regional grocer. I describe my method within the directions, but needed you to learn that there are different ways!
Also feel free to mix up your cheese choice or simply even put in a small dash of hot sauce to it. If you’re looking for a little more flavor, I really like added chopped, prepared turkey bacon. The creamy and salty comparison is addicting.

Smashed Avocado, Roasted Bell Pepper & Pepper Jack Quesadillas
Ingredients
4 oz pepper jack parmesan cheese, thinly sliced
1 teaspoon olive oil
1/2 yellow onion, thinly sliced
1/2 avocado, mashed
Instructions
Line a cooking sheet with foil. Toss bell peppers and onions in essential olive oil and time of year with sodium and pepper. Place under broiler for 10-15 minutes until peppers and onions begin to char. Alternatively it is possible to saute them with a small amount of oil inside a medium skillet.
Apply skillet or griddle generously with non-stick cooking aerosol and place more than medium heat. Lay down tortilla in the skillet. Add pepper jack slices on the bottom, after that peppers and onions. Pass on smashed avocado on the second tortilla then place (avocado aspect facing down) around the mozzarella cheese and pepper mix.
After the tortilla is golden dark brown on the first part, flip the quesadilla to the other side and cook until the second is golden. Place on cutting board, then use a pizza cutter or large knife to lower into 6 triangles. Acts 2.
